This simple sweet conjures up memories of home and is supreme comfort food.
300g short grain rice
1 (5cm) strip lemon peel
1 cinnamon stick
350ml evaporated milk
1 (397g) tin condensed sweetened milk
1 tablespoon vanilla extract
1/4 teaspoon salt
- Combine 525ml of water, rice, cinnamon stick, cloves and peel in a saucepan. Bring to the boil over medium heat, then reduce heat, cover and simmer for 20 minutes until the rice is tender.
- When rice is tender, carefully remove the peel, cinnamon and cloves with a slotted spoon. Over low heat, gradually stir evaporated milk and condensed milk into the rice. Mix in vanilla and salt. Continue to stir until the mixture thickens, about 7 to 10 minutes.
- When pudding reaches desired consistency, remove from heat and pour into individual dishes, or a large bowl. Store in the refrigerator until ready to serve.
