Arroz con leche (Rice Pudding)

This simple sweet conjures up memories of home and is supreme comfort food.

525ml water
300g short grain rice
1 (5cm) strip lemon peel
1 cinnamon stick
2 cloves
350ml evaporated milk
1 (397g) tin condensed sweetened milk
1 tablespoon vanilla extract
1/4 teaspoon salt

  1. Combine 525ml of water, rice, cinnamon stick, cloves and peel in a saucepan. Bring to the boil over medium heat, then reduce heat, cover and simmer for 20 minutes until the rice is tender.
  2. When rice is tender, carefully remove the peel, cinnamon and cloves with a slotted spoon. Over low heat, gradually stir evaporated milk and condensed milk into the rice. Mix in vanilla and salt. Continue to stir until the mixture thickens, about 7 to 10 minutes.
  3. When pudding reaches desired consistency, remove from heat and pour into individual dishes, or a large bowl. Store in the refrigerator until ready to serve.
