The Mojos

The basis for these sauces tends to be what they call on the islands “pimienta picona” (chilli peppers).

Hot Red Mojo Sauce

6 cloves of garlic
1/2 teaspoon of cumin
1 pinch salt
1/2 hot pepper
pinch of paprika
3 parts oil to 1 part vinegar

Crush half a dozen cloves of garlic in the indispensable mortar together with half a teaspoonful of cumin and a pinch of coarse salt. Add half a hot red pepper and continue to crush. Add paprika and finish by adding oil and vinegar, at a proportion of three to one approximately until the desired consistency is obtained.

Green or Coriander Mojo Sauce

1 pinch salt
1 bunch chopped cilantro (coriander)
2 cloves garlic
1/2 teaspoon of Cumin
a little green hot pepper
3 parts oil to 1 part vinegar

Add a puñadito of salt together with a bunch of fresh coriander, finely chopped, some cloves of garlic and a pinch of cumin. Crush well in a mortar and pestle and then add a little sliced hot green pepper and continue to work with the pestle and mortar. When a paste is formed, add a generous dash of oil and a little vinegar. Some people like to add a little white wine. This is optional.
