The All Bran Challenge!

During one of those periods when I thought I would be good, I bought a packet of All Bran cereal and after one or two bowls found it disgusting and tasted like sawdust so I shoved it to the back of the cupboard.   I came across it yesterday and the challenge was what to do with it rather than throw it out.  I weighed 5 oz of cereal which purely by eye looked to be a decent amount to make a loaf, and then I added the following ingredients using the same measurements.

Ingredients:
5 oz All Bran
5oz  Sugar (use brown sugar if you want a darker loaf otherwise white is fine)
5oz Dried fruit (raisins, currants, apricots or whatever you have to hand)
5 fl oz Milk
5 oz Self Raising flour

Method:
In a mixing bowl place the bran, sugar, fruit and milk and mix well. Cover and leave for a few hours. Once the liquid has almost all been absorbed fold in the flour.

Line a 1lb loaf tin. Place the mixture in the tin and bake at 180°C for about 30 – 45 minutes or until you can put a skewer into the loaf and it comes out clean. Remove from the oven and leave to cool for a few minutes in the tin. Then turn the loaf out to completely cool on a rack. I spread the top with apricot jam and scattered flaked almonds over it then served sliced and buttered.  Delicious.  This in my opinion is the best use of All Bran and challenge completed!

    That looks lovely must give it a go.
    Just spent yesterday making date and walnut scones that ended up like bricks and a banana loaf that looks as if it needed another 30 mins in the oven ,hate it when that happens.
