I like tasty meals but I like them better if they only take around 30 minutes from start to finish. This recipe serves Serves 2 – 3 people and makes a nice tasty supper dish.
1 tbsp plus 1 tsp. extra-virgin olive oil
6oz dried pasta
2 or 3 links good quality sausage (casings removed) I like Iceland’s Pork and Apple
1 clove garlic, minced
1 medium onion
1 small tin peeled tomatoes
4 oz mature cheese, grated (I like the one below)
Salt and black pepper
4 oz. shredded mozzarella cheese
freshly grated Parmigiano-Reggiano for serving
In a large saucepan, bring salted water to a boil add the pasta and cook until just tender, about 10 minutes. Drain well and set aside.
Lightly grease a baking dish with 1 tsp. of the olive oil.
Meanwhile, heat the remaining oil in a frying pan over medium-high heat. Add the sausage, and cook until lightly browned. Add the onion and garlic and fry until the onion is soft, season with salt, and cook, until it colours slightly. Add the tomatoes and their juices and cook breaking up the tomatoes with the spoon, for 5 minutes so the sauce thickens slightly.
Pour the sauce over the cooked pasta and add the grated goat’s cheese, stir well. Spread the pasta and sauce evenly in the baking dish.
Sprinkle with the mozzarella and place in oven and bake, uncovered, for 15 to 20 minutes, until golden and bubbly. Serve immediately with Parmigiano, if you like.
