Butterscotch Pie

Regulars readers know by now that I rarely throw anything away.  I have to try and make something tasty from left over food in my cupboards.  This week, I took five biscuits (2 chocolate digestives and 3 canella crisps) that I had left in the bottom of the barrel, beat them with a rolling pin until they were crumbs then mixed them with a tablespoon of melted butter.

2oz brown sugar
1oz plain flour
scant ½ pint milk
1 Egg yolk
Knob of Butter
½ tsp. vanilla essence

To decorate
Double cream,
Grated chocolate

Line the bottom of a cake tin with the mixture and put in the fridge while making the filling.


Place the sugar, flour and milk in a saucepan and heat, stirring until thick. Remove from the heat and let it cool for 2 or 3 minutes then stir in the egg yolk and cook for another minute, then add the butter and vanilla essence.


Decorate by grating those two squares of chocolate that OH was keeping at the back of the fridge!!
